Easy OREO Truffles


 My daughter had this treat at a sleepover last Saturday and came home on Sunday ready to make some for us to try!! I have to say that they are delish and super easy to make!
Another treat to save under my easy recipes for sweet table!




INGREDIENTS:
1 (16 ounce) package OREO Chocolate
Sandwich Cookies, divided
1 (8 ounce) package PHILADELPHIA Cream Cheese, softened

2 (8 ounce) packages BAKER'S Semi
-Sweet Baking Chocolate, melted





DIRECTIONS:
1.Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
2.Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
3.Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

My daughter and I made some football truffles for today's BIG game! This was our first time doing it! Overall they came out ok. ;)

Healthy Shake

To make this shake, I always use 4 types of fruit. The fruits that I use depends on the season. Sometimes I use apples, avocados, watermelon, cantaloupe, blueberries, grapes or whatever I have in the fridge, but I always use strawberry and banana as my must have ingredients.

Have your daily 4 serving of fruit with this yummy shake! I make this every morning for me.
It is a good way to start a busy day!
The fruits that I used today were banana, strawberry, blueberry and watermelon.


Ingredients

2 Tablespoon of golden flax seed
1 Tablespoon of granola with cranberries and acai( you will find it at a whole food store)
3 ice cubs
1/2 cup of water
2 Tablespoon of nonfat plain yogurt
a hand full of blueberries
1 banana
1 cup of cut up watermelon
6 strawberries

Blend the flax seed and granola together in a blender (flax seed is better absorbed by the body if it is grounded), add remaining ingredients and blend until is all mixed together. You might need to add more liquid to it, you can add juice or more water. There!  It is ready for your enjoyment and quilt free! Your body will thank you! :)

Chicken with Cherry Tomatoes


This was our dinner last night. We had it with pesto and whole grain linguine. 
It was so yummy!


I always marinate my chicken the night before with garlic, salt, pepper, red vinegar and a bit of olive oil. If you do so, it is no need to add salt and pepper before you cook but I always add a lit more of garlic powder before cooking the chicken.


Ingredients
  •  tablespoons olive oil

  • 2  skinless chicken breast cut up in small pieces

  • 1/2  teaspoon garlic powder

  • 1/4  teaspoon salt

  • Freshly ground black pepper

  •  cups cherry or grape tomatoes

  •  tablespoons Balsamic or sherry vinegar

  • Prep Time - 5
  •  
  • Cook Time - 16
Instructions
  1. Sprinkle chicken with garlic powder, salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides. Reduce heat to medium and add tomatoes. Cook until chicken is done.
  3. Sprinkle with vinegar and scrape pan to loosen brown bits.
